Faux Huevos Rancheros

This morning I decided to try a veganized version of Huevos Rancheros. My version is toasted tortilla, with vegetarian refried beans seasoned with cumin, garlic, onions and a little jalapeño. I topped it off with pre-made salsa and Daiya vegan cheese. My ‘eggs’ were slices of baked or fried frozen and thawed tofu.

This weekend I attempted my first receipe from Viva Vegan! (link takes you to a great ‘how to’ vide by the author). A book I bought only because it had so many high reviews on Amazon and Barnes and Noble. Turns out, it’s a Latin food cookbook. Doh. Excellent. I love Latin American foods.
