Black Bean Soup

It seems like every vegan and their mother has a version of black bean soup. Mine showcases my love of all things Cooks Illustrated. I have yet to meet a soup I don’t like. I previously made the meaty version of the Black Bean Soup using a smoked turkey leg for flavor (I didn’t eat pork and shellfish before giving up meat). I was nervous that it wouldn’t have the same bang without meat. Was totally wrong!

This version is yummy because of the copious amounts of cumin. For my vegan version I also added two 15 oz cans of tomatoes and a cup of TVP (Textured Vegetable Protein). I could definitely have skipped the TVP. To boost flavor, I added two chipotles and a tablespoon of the adobo sauce.

The add ons are what makes this fun. For mine, cilantro and Toffuti cream. But, you can always add red onion, cheese, avocado… the list goes on!

I’m out of the office this week so I don’t know how this went over with the other girls. But, it’s a favorite of mine.
